Salad may not always be at the top of everyone’s list, but we think our Spiralized Waldorf Salad may be about to change things. With fresh Granny Smith apples, lemon, grapes, walnuts, honey and gorgonzola being just some of the ingredients this dish calls for it’s certainly packed full of flavour and by using our spiralizer the celeriac and green apple add a lovely lighter texture to keep this salad feeling fresh and light.

Using a non-stick baking tray for caramelising the grapes and roasting the walnuts makes the clean up at the end a breeze (and you can even pop these ones in the dishwasher), but don’t forget – if you’re making this to serve at a dinner party or a summer BBQ don’t dress your salad until your guests are ready to eat otherwise it’ll make the leaves limp and soggy, and by providing your guests with salad servers it also help keep any grubby mitts out of the bowl!

Ideal for making a delicious Spiralized Waldorf Salad, our ProCook spiralizer is great for turning celeriac and green apples into exciting new textures for a dish perfect for summer BBQs

Ingredients

FOR THE SALAD

  • 2 Granny Smith apples
  • 1 lemon
  • 150g red grapes
  • A drizzle of olive oil
  • 60g shelled walnuts
  • 1 celeriac
  • 1 red onion
  • 1 Romaine lettuce
  • 1 slice Gorgonzola

FOR THE DRESSING

  • 250ml fat-free Greek yoghurt
  • 1 tsp English mustard
  • 2 tbsp raw honey (melted)
  • 1 tsp apple cider vinegar
  • 1 tbsp chopped fresh thyme

Method

  1. Preheat the oven to 180°C, place the grapes on a baking tray and top with the zest of ½ the lemon. Drizzle with olive oil, season with a little salt and pepper and cook for 15 minutes.
  2. Add the walnuts to the tray and roast for 5-10 minutes until the grapes are caramelised and the walnuts are golden.
  3. Add the mustard, apple cider vinegar, honey and yoghurt to a bowl and mix well before adding the chopped thyme and the juice of ½ a lemon.
  4. Spiralize the celeriac and apples, and sprinkle with the juice of the remaining ½ a lemon to keep them fresh.
  5. Roughly tear the lettuce leaves and line the bottom of the bowl with them, before adding the spiralized celeriac and apple and topping with the caramelized grapes and chopped red onion.
  6. Drizzle with the mustard dressing and toss well, finishing it off with roasted walnut pieces and crumbled gorgonzola.
