As with many tasks, to get the most out of your cooking you need to make sure you have the right tools for the job. Perhaps you have opted for our Designpro knives, or maybe our premium Damascus X100 range took your fancy? Regardless of which range you have chosen, one thing that they all have in common is a need for the right aftercare. It may seem daunting, but caring for your kitchen knives is easier than you may think and a large part of this is ensuring you’re sharpening them with the right tool to retain a sharp edge.
The needs of different blades vary greatly, so we’re going to talk you through the correct uses of each of our sharpeners so that you can make sure you’re using the right one for your knives. A little TLC goes a long way, and if you’re sharpening your knives for no other reason you should be doing it for safety reasons – a sharp knife will cut much more smoothly and require less effort, reducing the risk of slips and accidents.

Whetstones
Whetstones are a great all-rounder when it comes to sharpening knives as they can be used with all our ProCook knife ranges. Available in either a 600 grit or combination 600/2000 grit, when you wish to sharpen your blades simply soak the whetstone for 5-10 minutes prior to use and place in the storage and draining tray.
Take your knife and place it over the end of the whetstone before running the blade at a 20° angle along the entire length of the 600 grit stone in a smooth, sweeping motion using even pressure. Repeat this process ten times and if using the double sided whetstone, repeat on the smooth side.
Please note – our whetstones are not suitable for use with ceramic blades.

Both can be used with our Designpro range of knives, with the Professional X50 and Gourmet X30 sharpening steels being suitable for use with their respective knife ranges also. You should aim to sharpen your blade at a 20° angle, starting with the heel on the sharpening steel and moving down and across to finish with on the tip, repeating the process 3-4 times.
Please note – these are not suitable for ceramic blades.

Repeat the process with the second diamond wheel for extra sharpness and to finish, run the blade to and fro on the third and final wheel to hone your knife.

Our twin wheel sharpener is a must-have for those who own a selection of knives and wish to keep them all sharp with one handy tool. Our twin wheel diamond and ceramic knife sharpener is easy to use, small enough to store away neatly and is suitable for all the ProCook knife ranges.
To use the knife sharpener, simply remove the cover of the sharpening blade and add approximately 5mm of water as this will act as a wheel lubricant for the best results. Replace the cover before running your knife blade in a to and fro motion through the diamond wheel (no. 1) 3-4 times, taking the initial bluntness from the knife. Repeat the same process with the ceramic wheel (no. 2) which will leave the blade extra sharp.

Knife sharpening just got a whole lot easier. With 2 super-hard diamond wheels for sharpening and honing, the ProCook Electric Knife Sharpener efficiently sharpens and refines most household knives. Suitable for use with the ProCook designpro, Gourmet X30 and Professional X50 knife ranges.
When using the electric knife sharpener there are two stages to follow – the first sharpens your knife blade, bringing it back to its original glory and the second stage hones and refines the blade. Make sure that you always pull the knife towards you in one smooth movement, never push away from you and avoid twisting the blade during sharpening.
