Rainbow pitta pizzas

We have all been there – getting your little ones interested in eating vegetables is tough. Really tough. As soon as they catch a whiff of anything healthy all hell breaks loose, but we think we may have a solution in the form of our colourful Rainbow Pitta Pizzas. Not only are they fun and exciting to look at, they’re really easy to make and are perfect for getting little hands involved (we have found that it makes them more likely to try new foods if they have been involved in the process) whilst teaching them the importance of healthy eating from a young age.

Great for getting children eating their veggies, we love these ProCook Rainbow Pitta Pizzas! Fun and simple to make they are great for lunchboxes too.

We chose our ingredients to fit a rainbow theme but if you know your fussy little eaters prefer a different veg or you have something that needs using lurking in the back of the fridge, simply swap them out! There are no rules here and it is all about making healthy choices fun. Similarly if you’re trying to eat a little healthier yourself these pittas are great in lunchboxes too!

What you’ll need to make Rainbow Pitta Pizzas

Baking tray

Chefs knife

Chopping board

Can opener

Great for getting children eating their veggies, we love these ProCook Rainbow Pitta Pizzas! Fun and simple to make they are great for lunchboxes too.

The ingredients

  • 4 wholemeal pitta breads
  • 4 tsp tomato purée
  • 60 g mature reduced-fat cheddar (grated)
  • 8 cherry tomatoes (sliced)
  • ½ orange pepper (chopped)
  • ½ green pepper (chopped)
  • ½ red onion (chopped)
  • 1 can sweetcorn (drained)

Method

  1. Heat the oven to 180°C and place a baking sheet inside to warm up.
  2. Spread each pitta bread with 1tsp of the tomato purée using the back of the teaspoon for easy spreading.
  3. Sprinkle a quarter of the cheese evenly over each pitta then top with each of the vegetables in lines in the order of the colours of the rainbow.
  4. Carefully place the pitta pizzas on the hot baking sheet and bake in the centre of the oven for 8-10 minutes.

Healthy rainbow pitta pizzas

Not only are they fun and exciting to look at they’re really easy to make, perfect for getting little hands involved (we have found that it makes them more likely to try new foods if they have been involved in the process) whilst teaching them about the importance of healthy eating from a young age.

We chose our ingredients to fit a rainbow theme, but if you know your fussy little eaters prefer a different veg simply swap them out! There are no rules here, it’s all about making healthy food fun for kids to set them up in the best possible position for continuing their healthy eating into adulthood. Similarly if you’re trying to eat a little healthier yourself these pittas are great in lunchboxes too!

All you need to make these yummy pitta pizzas is a sharp knife (keep away from any little ones involved!), a chopping board and the grill section of your oven.
