Basic tomato sauce

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion (finely chopped)
  • 1 clove garlic (crushed)
  • 400 g chopped tomatoes
  • ½ can water
  • 1 tsp mixed herbs (heaped)
  • salt and pepper (to taste)

Instructions
 

  • Pour the oil into a medium sized saucepan and set on a low to medium heat.
  • Once the oil is hot add the onion and stir. Replace the lid and sweat for 3-5 minutes until they have softened.
  • Add the minced garlic, stir and cook for 1 minute.
  • Pour in the chopped tomatoes, mixed herbs, water and herbs and stir before replacing the lid and cooking on a low heat for 15 minutes.
  • Remove the lid and cook on a low heat for a further 30 minutes or until the sauce is thick and rich in flavour.
  • Season the sauce, remove from the heat and allow to cool.
  • Blitz in a blender for a smooth sauce or leave as is for a more rustic texture.
