It’s National Cupcake Week, so every day this week, we’ll bring you one of our favourite cupcake recipes, expertly prepared by our star baker! We start with traditional vanilla cupcakes, topped with delicious icing applied delicately using a piping set.

Instructions
  1. Preheat the oven to 180C.
  2. Line a muffin tin with paper cases.
  3. Cream the sugar and 110g of butter. Whisk in one egg at a time and stir in the vanilla extract.
  4. Add the flour and half the milk.
  5. Add the mixture to the paper cases until half full.
  6. Bake for 10-15 minutes until golden brown.
  7. Allow to cool for 10 minutes.
  8. To make the buttercream icing, whisk the remaining butter until soft and add half the icing sugar. Continue beating until smooth.
  9. Add the rest of the icing sugar with a 1 or 2 tablespoons of milk, depending on how much it takes to make the mixture creamy.
  10. Add the food colouring.
  11. Continue mixing until thoroughly combined.
  12. Put the icing in a piping bag and top the cupcakes with a spiralling shape.
