Spiced Red Cabbage with Apple and Cranberries
 

Red cabbage is a perfect accompaniment to such a diverse range of meals, yet it’s an often overlooked favourite of ours which is incredibly simple to whip up. We’ve spiced things up a little by adding apples, red wine vinegar and a selection of spices to add a twist to the classic which we are certain will soon become a favourite of yours too. All you need is a Sauteuse pana sharp knife, and something to stir for this recipe. To keep the spice element to your dish, start with just a little of your sugar and taste… You can always add more but it’s impossible to take out!

  1. Taking the apple, chop into small pieces. For added flavour you can keep the skin on but if you'd prefer a smoother and softer result remove the peel too.
  2. Remove the root and shred the red cabbage into small pieces
  3. Melt the butter and oil in a large, heavy-based pan over a medium heat
  4. Throw the chopped onion into the pan and brown for 2 minutes
  5. Place the chopped garlic and apple into the pan and pour in ¼ of a cup of red wine, and cook for a further 2 or 3 minutes stirring occasionally to avoid burning
  6. Turn up the heat! Stir fry the red cabbage but don't forget to keep it moving with a wooden spoon to stop is burning or sticking! Continue this for a further 5 minutes
  7. Sprinkle the mixture with the cloves, cinnamon and nutmeg and season to your liking with the sea salt and black pepper
  8. Turn the heat down low, add the remaining ¼ of the cup of red wine and the cranberries and stir occasionally for the next 10 minutes of gentle cooking
  9. Make sure to check your cabbage, and once it's softened and has a lovely tender texture sprinkle with the red wine vinegar and brown sugar before turning up the heat once more
  10. Give everything a good stir to ensure all of the mixture is coated and seasoned to perfection, and you're ready to serve
