Instructions
  1. Skin the mackerel, ensuring all that skin has been scraped off with a sharp knife.
  2. Break the fish into smaller pieces, removing all bones. Add to a food processor.
  3. Whiz for a few seconds, and add the lemon juice, parsley leaves and cream cheese.
  4. Blend for a further 20 seconds until the mixture resembles a creamy pate.
  5. Season with salt and pepper and serve on toast.
