  1. Preheat the oven to Gas mark 4-5, 180-190°C, 350-375°F.
  2. In a small bowl mix together the maple syrup, cider vinegar and mustard.
  3. Place the joint on a chopping board and make several slits over its surface.
  4. Season and rub the mixture over the surface of the joint and into the slits.
  5. Place the joint on a metal rack in a large roasting tin and open roast for allotted cooking time according to size basting occasionally with any rich meat juices.
  6. Serve hot with roast potatoes and fresh vegetables.
