Instructions
  1. Preheat the oven to 200C.
  2. Cut the peppers in half and de-seed – make sure to keep the stalks intact.
  3. Spread over a baking tray and drizzle with a small amount of olive oil.
  4. Sprinkle the chilli flakes over the pepper and roast for 25 minutes.
  5. When tender, remove from the oven.
  6. While the pepper is roasting, place the couscous in a bowl and cover with 125ml boiling water. Stir, cover the bowl and leave to stand for 10 mins.
  7. Stir in the pine nuts, couscous, chopped coriander, black olives, feta, sun-dried tomatoes and basil.

  9. Spoon the couscous into the pepper halves and place back in the oven for 5 minutes.
  10. Serve immediately.
