Pour the flour into a mixing bowl and make a ‘well’ in the centre. Break the 4 eggs into the well and blend slowly with a fork. Combine the eggs and flour until well blended. If the dough mixture is too wet, gradually mix in a small amount of flour, if to dry gradually work in a little water.
Spread a little flour very lightly on your worktop and knead firmly until of a consistent colour and texture.
Form the dough into a mound and cover with a damp cloth, leave to rest for 15 minutes.
Cut the dough into slices about 1/4” thick. Keep the portion of dough you are not using under the damp cloth.
Using a pasta maker ( please see machine instructions) roll out the pasta dough and cut into thin strips.
Cook for 4 - 5 minutes either in boiling water or cook directly in a sauce.
