Instructions
  1. Chop the chocolate into small pieces and put in a large mixing bowl.
  2. In a 14cm saucepan gently heat the cream and butter until it simmers.
  3. Pour the hot cream mixture over the chocolate and mix until smooth. Add flavouring of your choice e.g rum, vanilla or coconut.
  4. Place the mixture in the fridge for 3 to 4 hours to chill.
  5. Once cool, use a melon baller to scoop the mixture into small truffles.
  6. Roll the truffles in cocoa powder, chopped nuts or desiccated coconut immediately and then chill for a further 30 minutes.
  7. To present as a gift place the truffles in individual cases or wrap in tin foil and store in the fridge until ready.
