ProCook Dark Chocolate and Orange Tarts Recipe

We forgot how much we adored orange in desserts and what goes better with orange than rich and velvety dark chocolate. These tempting little tartlets will go down a treat at any dinner party.

Instructions
To make the pastry
  1. Grease six tartlet tins with a small amount of butter
  2. In a large mixing bowl, sift the flour and add the butter. Rub together until it resembles fine breadcrumbs.
  3. Add the milk a small amount at a time, until it forms a loose dough.
  4. Form into a ball, wrap in cling film and place in the fridge for 25 minutes.
  5. Preheat the oven to 180C.
  6. On a floured work surface roll the chilled pastry out. Line the tartlet tins with the pastry.
  7. Cut parchment greaseproof paper in to the shape of the tartlet tins and place on top of the pastry in each one. Add some baking beads on top, cook for 8 minutes.
  8. Remove the paper and baking beads and put back in the oven for a further 5 - 7 minutes.
  9. Remove from the oven and let them cool on a cooling rack.
To make the ganache
  1. Heat the chocolate and cream in a heat proof bowl over a saucepan of hot water. Stir together until it forms a smooth and creamy mixture. Stir in the Cointreau.
  2. Pour the ganache into the pastry shells, place a slice of orange on top and chill for 45 minutes.
