  1. Bring a large pan of water to the boil and add the broccoli, cauliflower and carrot. Cook for 10 to 15 minutes until soft. Cool under a cold tap and drain well.
  2. In a mixing bowl combine the flour, cumin, garlic, spring onions and parsley.
  3. Add the eggs and cooked vegetables and mix until well combined.
  4. In a large griddle pan heat a tbsp of oil and swirl to coat. Form a tbsp of mixture into a ball and flatten slightly with a spatula. Cook each fritter for 3 to 4 minutes each side until golden brown.
  5. Transfer to a plate with a paper towel to remove excess oil.
