Chickpea and Coriander Burger Recipe
 

This chickpea and coriander burger is so delicious you won’t even miss the meat, we promise! Packed with 2 of your 5 a day and high in fibre, it makes for a great evening meal for all the family. All you need is a food processor, a burger press, a mixing bowl and a griddle pan.

Instructions
  1. Add chickpeas. lemon zest, lemon juice, cumin, half the coriander, carrot, garlic, the egg and some salt and pepper to a food processor
  2. Blend together to a rough and thick consistency
  3. Scrape mixture into a bowl and add the diced onion and 80g of the breadcrumbs
  4. Mix together by hand
  5. Place mixture into the burger press and create burger patties
  6. Coat with remaining breadcrumbs
  7. Chill for 15-20 minutes
  8. Place patties on a pre-heated grill or griddle plate and cook for 5 minutes before turning
  9. Cook for a further 5 minutes
  10. Slice buns and serve with a slice of tomato, a few red onion slices, some cucumber slices, a spoon of chilli sauce and the remaining coriander
