Instructions
  1. Preheat the oven to 200C.
  2. Peel and dice the squash into 4cm cubes.
  3. Cook in a large roasting tin for 30 minutes until soft and golden. Turn after 15 minutes.
  4. While the squash is cooking, combine the butter and olive oil in a saucepan, before adding the onions and garlic.
  5. Add a lid to the saucepan and cook on a low heat until the onions are soft.
  6. Once the squash has been cooked, add the squash, stock and crème fraiche. Whizz until smooth.
  7. Top with a touch of paprika and serve.
