ProCook Irish Stew Recipe

Whilst this dish is perfect for St Paddy’s Day, this Irish Stew is far too tasty to keep for just one day a year! Packed with tender lamb, root vegetables and herbs it’s a comforting, homely dish full of flavour.

Instructions
  1. Brown the meat in 1 tsp. olive oil over a medium heat and place to one side.
  2. Sauté the carrots and onions in the same pan you cooked the meat in for 5 minutes then add the lamb back in.
  3. Add the Thyme sprigs, cover with the stock and boil for a 1 hour.
  4. Add the potatoes, season with salt & pepper and cook for a further 30 minutes.
  5. Serve with freshly chopped parsley and crusty bread.
